It is a challenge to control blood sugar for a diabetic. When you eat carbohydrates they are quickly digested and converted into glucose that is rapidly released into the blood stream (blood sugar). Insulin is released by your body to help control blood sugar.

Studies have shown that Apple Cider Vinegar and help control blood sugar levels rapidly increase when you eat a lot of refined carbohydrates (sugar, white flour, cookies, cakes, bread, soda, candy, sweetened cereals, etc.) and large amounts of insulin are released into your blood stream, creating insulin spikes.  Insulin is a very powerful fat storage hormone. After each insulin spike, the hormone remains in the blood stream. Acetic acid that helps to control blood sugar is found in many types of vinegar.  Apple cider vinegar is made by the fermentation of apple cider. During the fermentation process, sugar in the apple cider is broken down by bacteria and yeast into alcohol and then into vinegar.  Apple cider vinegar also contains some lactic, citric and malic acids.  Foods that help lower or control blood sugar can be delicious if you know how to prepare them.

In addition to its blood sugar regulating properties, apple cider vinegar provides the following nutrition, particularly the organic, raw-unfiltered variety:  pectin, malic acid, ash and acetic acid; Vitamins: C, E, A, B1, B2 and B6; Minerals: selenium, manganese, copper, zinc, sodium, potassium, phosphorus, magnesium, iron and calcium. Studies have shown that the acetic acid in the apple cider vinegar help to regulate blood sugar.

Unpasteurized, raw-unfiltered apple cider vinegar has mother of vinegar. Mother of vinegar is what settles at the bottom of the bottle and is mostly made up of acetic acid bacteria. Professor Carol Johnston PhD, working on the subject of vinegar and diabetes with her research team from the department of nutrition at Arizona State University, has published results on the following three studies:  1) apple cider vinegar before meals; 2) apple cider vinegar before bedtime and 3) apple cider vinegar during meals for healthy adults.  The studies show that people with type 2 diabetes who consumed two tablespoons of apple cider vinegar at bedtime showed favorable changes in blood sugar levels the following morning.
The blood sugar rise that normally occurs after a high carbohydrate meal was reduced for diabetic patients who consumed 2 tablespoons of apple cider vinegar before the meal.  Taking steps to reduce “after meal blood sugar levels” is recommended by the American Diabetes Association to limit complications of diabetes.  Eating foods that help to reduce after meal blood sugar levels is a safe and affordable option for diabetics.  Regular physical exercise, a healthy diabetic diet and consuming apple cider vinegar before meals and before bedtime should help you control your blood sugar levels.
